The Variety:
Often called the king of red wine varietals, Cabernet Sauvignon is grown around the world with success and makes a ripe, concentrated and satisfying wine. It does particularly well in California where the various microclimates allow for many flavor and structure profiles to be achieved both in the vineyard and by the winemaker’s craft.
The Vintage:
Overall, the 2007 grape crop yields were a bit smaller than the two previous years. The quality was excellent, however, and the resulting richly-hued wines are denser, with more concentrated texture and brisk tannins. We blended in components from vineyards in Paso Robles and outside the Central Coast to give this Cabernet Sauvignon its classic varietal character; a strong, dark fruit nose; and a kiss of French toasty oak.
