The 2006 D&S Proprietary Red wine is the second vintage of a wine that originated accidentally. The initial goal was to launch the BIN 36 wine production in partnership with Hahn Estate to produce Chardonnay, Merlot and Cabernet Sauvignon as the first releases. However, during the fruit selection process, some uncommitted and unbelievably high quality grapes passed through. While the quantity was small, Bin 36 was determined to use it to produce a high quality small production wine from the best fruit available without restricting the labeling to with one major grape variety. Bin 36 has always believed that greater complexity can be achieved from understanding the structure and flavor profiles from one grape to another, in the same way great chefs instinctively master the art of seasoning food. During the blending process, a winemaker has the opportunity to accentuate and integrate flavors to maximize their complexity; depth and mouthfeel- produce a wine greater than the sum of its parts. To this end, the 2006 is the unmistakable sequel to the silky textured 2005. What makes the 2006 different is its’ darker mineral core with smoky black plum, red and black currants and a mocha scented Bordeau-esque sophistication.
